These traditional Greek appetizers originated in Santorini, the crunch of the bite-sized fritters filled with flavors of tomato, herbs, and fresh feta and paired with our Roma Pizza & Mild Aleppo Pepper seasoning creates a taste of culture in everyone’s mouth!
Ingredients
For the Tomatokeftedes -
4 firm medium-sized tomatoes, diced
1/2 Yellow onion, diced
2 cloves of garlic, minced
2 Tbsp of Scallions, chopped
4 Tbsp fresh Dill, chopped
4 Tbsp fresh Mint, chopped
8 oz block of fresh Feta
1 Tsp Ground Black Pepper
2 Tsp of Mom Cave Foods “Roma Pizza” seasoning
1 Tsp of Mom Cave Foods “Mild Aleppo Pepper” seasoning
1 Tsp of dried Oregano
1/2 cup of All Purpose flour
1 Tsp cornstarch
1 Tsp baking powder
Canola Oil
Directions
Step 1
Slice 4 washed tomatoes across the middle, creating halves. With a spoon, scoop out the seeds and juice of the tomato, and toss aside. Dice the remaining tomatoes and set aside. Next, slice across a yellow onion, creating half. Set aside the other 1/2 and begin peeling off the onion skin, then cut both ends off and dice the onion.
Step 2
In a bowl, combine the 4 diced tomatoes, 1/2 diced yellow onion, 2 cloves of minced garlic, 2 Tbsp of Scallions, 4 Tbsp freshly chopped Dill, 4 Tbsp freshly chopped Mint. With your hands, crumble an 8oz block of fresh feta on top, and mix ingredients until well combined. Next, to incorporate the seasonings, add a sprinkle of salt, 2 Tsp Mom Cave Foods Roma pizza, 1 Tsp Mom Cave Foods Mild Aleppo Pepper, and 1 Tsp of dried Oregano, and mix with a spoon.
Step 3
To make the paste, in the same bowl, add 1/2 cup of All Purpose flour, 1 Tsp of baking powder, and 1 Tsp of cornstarch to make it crispy, then mix all ingredients until a thicker paste-like texture is formed. Cover the top and refrigerate for 20 minutes to withhold the shape while frying.
Step 4
Fill the bottom of a deep pan with canola oil, place on medium heat, and allow 6 minutes to heat the oil. Next, use a medium-sized ice cream scoop OR a spoon to scoop the tomato mixture into the hot oil. Fry the mixture for 5 minutes then using a spatula, flip each fritter onto the opposite side and fry for 4 minutes until golden brown. Slide the Tomatokeftedes onto a cooling rack for 3 minutes. Pair with Tzatziki sauce and enjoy!
