For the Eggcellent Toast -
1 Large egg, whole
2 cups of water
1 slice of bread
1/2 an avocado, sliced or mashed
1 Tsp of Apple cider vinegar
For the chimichurri -
1 Tbsp of Chimichurri Cha Cha, Mom Cave Foods
1 1/2 Tbsp of Extra Virgin Olive oil
First, in a small bowl add 1 Tbsp of chimichurri cha-cha, and 1 1/2 Tbsp of Olive oil and stir to combine. Let the chimichurri sit for 5-10 minutes. Then, In a medium-sized pot on medium-low heat, add 2 cups of water, 1 Tsp of Apple cider vinegar, a sprinkle of salt, and allow heat to develop in the pot for about 3-4 minutes. Then, carefully crack 1 egg into a ladle, and slowly bring the ladle into the hot water, about halfway through the water. Allow the egg to firm for about 1 minute, then carefully drop the egg and remove the ladle from the water. Using the ladle, create a swirl motion inside the water by going in a circular motion 2 times. Allow the egg to cook for 1 more minute, then remove it from the water and place on a paper towel.
Now, slice 1/2 an avocado into vertical strips and place onto a piece of toasted bread. Then, add the poached egg on top of the avocado, place the activated chimichurri on top, and enjoy!
