Exotic Dragonfruit Stuffed Mushrooms

A summer treat with flavors of sweetness from the fruit and savor from the mushrooms paired with our Chicken Kabob seasoning combined in an easy side dish that everyone will love, bonus points when paired with our summer chicken kabobs!

Ingredients

For the Exotic Dragonfuit Stuffed Mushrooms -

18 Oz of Whole Portobello Mushrooms
4 Tbsp of Pomegranate seeds
2 Yellow Dragon fruit, Cubed
8 Tbsp of Mozzarella Cheese, Shredded
1 Tsp of Chicken Kabob seasoning, Mom Cave Foods

Directions

Step 1

Start by de-stemming the washed portobello mushrooms, pulling the stem in a back and forward motion until the stem is not attached to the mushroom, toss the stems, and set the mushrooms aside. Cut 2 yellow dragon fruit across the middle, then cut the inside of the fruit into small cubes and set aside.

Step 2

Place the mushrooms onto a 400-degree grill, then begin to stuff mushrooms while the heat absorbs the mushrooms, add 2 tbsp of the cubed dragon fruit inside the mushroom, then add 1 Tbsp of pomegranate seeds on the left side and 2 Tbsp of freshly shredded mozzarella cheese on the right side of the mushroom. Top with a sprinkle of chicken kabob seasoning and repeat the process for the rest of the mushrooms. Allow the mushrooms to cook for 3 minutes, then serve as a side with our summer chicken kabobs and enjoy!
