Lemon Delight cookies

The delicate texture of the cookie, the burst of zesty lemon, the silky smoothness
of the curd, and the hint of cinnamon, from our Rosie Delight blend, weave
together a tapestry of flavors that dance upon your palate, inviting you to savor
every single moment.



For the lemon cookies -
1 1/3 cups of White granulated sugar
2 Tbsp of Lemon Zest
4 Tbsp of Lemon juice, freshly squeezed
1 whole egg
1 3/4 cup of All Purpose Flour
1 tsp of baking soda
1/2 Tsp of Cornstarch
1/2 Tsp of Salt
1 Tsp of Vanilla extract
1/3 cup of Powdered Sugar

For the delight lemon curd-
2 whole eggs

1 egg yolk
4 Tsp of white sugar
3 1/2 Tsp of Lemon Juice, freshly squeezed
1 Tbsp of Lemon Zest
2 Tbsp of cold unsalted butter
1 Tsp of Rosie Delight, Mom Cave Foods


Step 1

First, in a medium-sized bowl, pour 1 cup of sugar, and 2 Tbsp of Lemon
Zest, and using your fingers with a rubbing motion, break apart the lemon zest
into the sugar for about 2-3 minutes until the sugar has become a pale-yellow
color. Then, crack 1 egg, 1 Tsp of Vanilla, and 4 Tbsp of Lemon juice into the
same bowl and whisk to combine flavors. Now, swift in 1 3/4 cups of flour, 1/2
Tsp of salt, 1 Tsp of baking soda, and 1/2 Tsp of cornstarch, with a rubber
spatula fold all the ingredients into each other until well combined. Cover the top
of the bowl with plastic wrap and refrigerate for 2 hours.


Step 2

Now to start on the delight lemon curd, in a medium-sized pot, add 2 whole
eggs, 1 egg yolk, 4 Tsp of sugar, 3 1/2 Tsp of Lemon juice, 1 Tsp of Rosie

Delight, and 1 Tbsp of Lemon zest, stir all the ingredients together on medium-
low heat, continuously stirring for 3-4 minutes until the batter thickens, then take

the pot off the heat, add 2 Tbsp of butter and stir until the butter has dissolved.
Next, transfer the mixture to a small bowl, cover the top of the bowl with plastic
wrap, and refrigerate for 2 hours.

Step 3

First, preheat your oven to 350 while forming the cookies. Remove the
lemon cookie dough from the fridge and allow it to rest on the counter for 10
minutes. Add 1/3 cup of powdered sugar to a small bowl and 1/3 cup of
granulated sugar to a different bowl and set aside. Then, using a medium-sized
ice cream scooper, scoop the dough into the bowl with granulated sugar, swirl
the bowl multiple times until the dough is coated, then add the dough to the bowl
with powdered sugar and swirl until fully coated, the dough will become a small
ball shape from swirling the bowls.

Step 4

Place the cookie dough onto a nonstick tray, spacing them far apart from
one another to prevent cookies from sticking together, then using the back of a
small ice cream scooper, push down gently in the middle of the cookie, now add
1 Tbsp of the lemon curd mixture into the center of the cookie, then bake for 12
minutes. Allow the Lemon Delight Cookies to cool for at least 10 minutes before
transferring, then enjoy!
