Stuffed zucchini boat

The sweet and earthy notes of the zucchini mingle harmoniously with the savory

meat, combined with creamy ricotta including hints of garlic and herbs from our

Roma Pizza seasoning. Creating a dish that elevates the humble zucchini,

ensuring a delightful contrast in every bite.

 

Ingredients

For the Zucchini Boat -

3 Zucchini Squash

1 LB of Ground Beef

1/2 LB of Ground Sausage

1 Jar of Rao’s Tomato Basil sauce

2 cups of Ricotta cheese

4 cloves of garlic, minced

1/3 cup of Parsley, finely chopped

1/2 cup of Parmesan cheese wedge, grated

1/3 cup of Mozzarella cheese block, shredded

2 1/2 Tbsp of Roma Pizza seasoning, Mom Cave Foods

Salt

 

Directions

Step 1

First, slice straight across the washed zucchini to create halves, then

scoop the inside seeds out and toss them aside. Put the zucchini onto a baking

tray and place in the preheated oven at 350 for 25 minutes.

 

Step 2

In a medium-sized pan on medium heat, add 1 pound of ground beef and

1/2 pound of ground sausage, break apart the meat as it cooks with a wooden

 

spatula, allow the meat to cook for 7 minutes then add 1 jar of Rao’s tomato

sauce, salt to taste and 1/2 Tsp of Roma Pizza seasoning to the pan, stir to

combine flavor and cook for an additional 5 minutes then remove from heat and

set aside.

 

Step 3

In a medium-sized bowl, add 2 cups of Ricotta, 4 cloves of minced garlic,

1/2 cup of grated Parmesan, 2 Tbsp of Roma Pizza seasoning, and 1/3 cup of

chopped parsley, with a spoon stir until well combined. Then, scoop 2-3 Tbsp of

the ricotta mixture onto the inside of the zucchini, then add 2-3 Tbsp of the meat

mixture on top of the ricotta, and sprinkle 1 Tbsp of shredded mozzarella cheese

on top of the meat. Place the stuffed zucchini boats back into the oven on High

Broil for 5-6 minutes, then enjoy!
